2. Mozzarella with nectarine, endive, and champagne dressing, Gourmet Traveller: Fear not, the dressing isn’t actually made with Champagne, but champagne vinegar, which can easily be replaced with white wine vinegar.

3. simple, salty, sweet and nutty broccoli soba, The First Mess: I’ve been getting a lot of broccoli in my Abel & Cole vegetable box of late, so this is a perfect mid-week supper dish for me.

6. Zucchini linguine, Feasting at Home: This may look like pasta but it’s not, it’s zucchini cut into fine strips, with basil ribbons, toasted pine nuts and shaved pecorino cheese, yum!
